Discovering a Passion for Culinary Arts

Thomas Borowitz’s love for food started early, influenced by his family.

"My grandmother was a great cook, my mom as well," he recalls, highlighting how family traditions can spark lifelong passions. This familial inspiration led him to a unique opportunity in high school: spending part of his day at a tech center focused on culinary arts.

“At 12 o'clock, I would get to the tech center and formed a good relationship with the chef there, who ended up getting me a job in a commercial kitchen,” he shares. This early exposure not only honed his skills but also ignited his desire to pursue a culinary career.

The Road to Professional Cooking

By his senior year, Thomas was already working in a prominent kitchen. “Four days a week, I worked in that same kitchen, Abigail Kirsch. Big catering kitchen,” he explains. This experience cemented his decision to apply to the Culinary Institute of America, where he graduated in 2008 with an associate degree.

Thomas’s career trajectory includes stints at Dolce International and Trump International. However, his preference for the conference center environment led him back to Dolce and Crotonville. “Everyone that I knew that worked here was extremely happy. Nobody had anything negative to say,” Thomas remarks, a testament to the positive work culture at Crotonville.

Overcoming Industry Challenges

The culinary world is not without its challenges. From maintaining high standards in food quality to adapting to the latest culinary trends, chefs face continuous pressure. Thomas’s journey reflects this as he navigated different roles and responsibilities, eventually rising to the executive chef position at Crotonville.

One of the critical aspects of his role is innovation, not just in food but also in beverages. Thomas introduces a refreshing twist on a classic cocktail with his Tom B. Collins mocktail. “We create this non-alcoholic gin using different spices and different roots,” he explains, showcasing his creativity and commitment to offering unique dining experiences.

Embracing Innovation in the Kitchen

Thomas’s Tom B. Collins is a perfect example of his innovative approach.

“This drink has two ounces of the non-alcoholic gin, one ounce of lime juice, and a half ounce of cucumber syrup,” he describes, blending tradition with modern culinary techniques. Clarified ice melts slower and ensures the drink remains flavorful and undiluted.

The Tom B. Collins, topped with carbonated cucumber juice made using a SodaStream and garnished with a cucumber slice, is a testament to Thomas’s attention to detail and passion for creating memorable culinary moments.
